Pose to pose is a term used in animation, for creating key poses for characters and then in betweening them in intermediate frames to make the character appear to move from one pose to the next.

I agree with this. You're pretty much locked in when you do something. Sluggish.

You can't block when you're mid-animation.

That's why you have to think before every move you do. "Ok I have a zerk at 5 meter from me he will try to knock back me. Do I have the time to heal my mate one time, two time ? Does I need to block right now ? Does I need to move away right now to buy me some precious time ?" This is what make Panzar a difficult game and this is why I love it : you NEED to choose what you have to do and if you're wrong ... eh there is a lot of chances that will cost your life !
